Captivated by the vitality of pesticide-free lemons encountered on the Shimanami Kaido, I started with the desire to create something you can enjoy without leaving anything behind. He made his own Italian-origin limoncello and served it to family and friends, which was very well received. Together with fellow nutritionists from his student days, he decided to take on the challenge of sake brewing. In 2017, he established the General Incorporated Association Tomono with the desire to "make with friends in Tomo." This brewery, renovated from an old house in Tomonoura, luxuriously uses rare lemons grown naturally on the islands of the Seto Inland Sea and carefully crafted by hand to produce authentic liqueurs.

What are we doing?

What we are working on is making liqueurs centered on lemon, a natural farming method from the Seto Inland Sea. We have partnered exclusively with farmers in Setoda Town, Onomichi City, Hiroshima Prefecture, using natural farming methods that are pesticide-free, fertilizer-free, and do not even require watering. By avoiding pesticides and chemical fertilizers, the peel is packed with lemon's natural vitality and aroma. Citrus fruits store essential oils in their skins, enriching their aromatic components through natural stress. Making the most of the lemon peel is the greatest feature of our Limoncino.
 
To maximize the natural flavors of the ingredients, we are particular about sugar. It blends beet granulu sugar from Hokkaido with cane sugar from Okinawa, with no artificial sweeteners, colorings, flavorings, or preservatives used. The rich richness and umami unique to honey sugar harmonize with the refreshing aroma of lemon, creating a gentle sweetness with depth. Because the simple production method allows the quality of the ingredients to directly show in the taste, we repeatedly prototyped and pursued the ideal balance.
