San Cosme is an Artesanal Mezcal made from 100% Espadine agave, born in Santiago Matatlán, Oaxaca. To embody the brand's worldview, we pursue thorough minimalism and craftsmanship from raw materials to manufacturing methods and design.
First, only espartine agave, which has been cultivated over 8 to 12 years, is used as the main ingredient. With a focus on sustainability, 5% of the harvest blooms to preserve natural genetic diversity. After harvest, the wood is slowly heated for three days in a traditional conical earth kiln dug into the ground, and the smoky aroma is brought out with mesquite wood. Grinding is done using a horse-drawn stone mill, and fermentation is done using oak barrels and spring water, maximizing the power of the wild yeast of the land.
Distillation is performed twice using copper pot stills, after which unnecessary alcohol is carefully removed, followed by thorough filtration through a 12-layer carbon filter. Ultimately, the alcohol content is adjusted to 40%, achieving a clear and pure flavor.
During the product creation process, we struggled to balance tradition and modernity. While preserving classic techniques, we pursue urban and sophisticated package designs and flavors that resonate with global sensibilities. From the perspective of the SDGs, we also emphasize sustainable agave cultivation and coexistence with local communities.
