They use local ingredients such as Sendai's specialty "beef tongue". In particular, the beef tongue is a special item sent directly from a high-end yakiniku restaurant in Sendai, and the aroma and flavor are completely different from that of regular beef tongue. In addition, we carefully select ingredients backed by the history and quality of the region, such as okara from the 150-year-old Ota Tofu Store, which was founded at the end of the Edo period and has been around for 150 years, and Hitomebore from Miyagi Prefecture.
We are also very particular about the manufacturing method. Each piece is carefully cut by hand by craftsmen, and the best manufacturing method for the material, such as low-temperature drying, freeze-drying, and two-stage finishing, is selected. It achieves a delicate finish that cannot be replicated by a machine.
