What are we doing?

The brand worldview we aim for is to create sake with unique value as a symbol of Odaka's reconstruction. To achieve this, we are thoroughly committed to maximizing the beauty and flavor of the rare variety "Rousaki."
 
First, special techniques are taken into cultivating Rouzen. Plum trees that usually reach 3~4 meters are deliberately pruned to about 1.5 meters and managed to ensure nutrients reach each fruit. This results in large, high-sugar fruits. Furthermore, harvesting while still green and ripening treatments bring out vivid red colors and rich anthocyanins.
