AKO KAWAI
Born in Mizunami City, Gifu Prefecture. A chef who studied table coordination with French-based dishes in France, the United States, and Thailand, and has long run his home salon 'AKO à table' in Tajimi City.
Its rich aesthetic sense and free thinking live on throughout the canelé specialty shop "Laborattoile Acco." With red striped walls, dried flowers covering the ceiling, fresh flowers, and antique fixtures—he personally designed every aspect of the store, creating a space that invites visitors into an exotic story. Its worldview has been featured several times on television, and the building received the Special Prize at the Tajimi City Harmony Awards. Efforts to harmonize with the landscape of the Kokeizan area while attracting young people from outside the region and energizing the region were highly praised.
