In his late 20s, he got married by chance and had a child the following year. He and his wife both worked together and both were far from home to work, and his later master advised him that it was too late to start a store after retirement, and that it would be better to start as soon as possible if he was serious about it, so he opened his own roasted coffee shop in 2019 several decades earlier than planned.

What are we doing?

At "Roasting Kobo Kogu An", we are particular about a unique roasting process that begins with washing the coffee beans.
This process, which is not carried out in many roasters, is not special to us, but "normal". We carefully wash the green beans, just as a cook washes vegetables. This is because we believe that by removing dirt from the beans, the original charm of the ingredients will be truly revealed.
The washed beans are carefully roasted one by one in the clean water and air of Kahoku Town. Rather than mechanical mass production, we value craftsmanship that fine-tunes roasting conditions to match the day's temperature and humidity, assessing the condition of the beans.
Beans carefully selected from around the world are classified by region of origin and taste, and roasting methods are selected to maximize the individuality of each one. Beans from Central and South America with their gorgeous acidity, beans from Asia with a deep balance of bitterness and sweetness, and beans from the Middle East and Africa with complex flavors – our mission is to bring out the best in each of them.
Nearly six full years have passed since the opening of the store until now (September 2025), but the number of beans has increased significantly, and the roasting process has been upgraded five times.
Excitement is achieved through the pursuit of flavor. What kind of beans are interesting to purchase to taste more individuality, and what kind of washing is needed to achieve stable roasting throughout the season.

This is the only ultra-deep roast blend that Roasting Kobo and Kogu An is proud of.
