The first challenge was to make a retort of our signature menu and popular No. 1 "grilled curry".
We had many meetings with the manufacturer who introduced us to the consultation desk in Nagano Prefecture, and we repeated prototype production so that it would be closer to the taste of the store.
Retorts are heat-treated at high temperatures for a long time during manufacturing, which changes the taste.
We were able to recreate the taste of the store with technology and ingenuity, and finally started selling it about 10 years ago.
After that, I wanted to make the next local curry, and I decided to develop a new curry with ingredients that can be said to be "Shinshu!"
In this development, we wanted to collaborate with a local business, and we had the cooperation of a long-established Nozawa pickled vegetable manufacturer.
The bright green Nozawa pickles, which are often sold at souvenir shops, are shallowly pickled, so they melted at high temperatures at the stage of poetry and did not leave a shape.
So, when I tried it with Nozawa pickles, which are a well-pickled type of pickled vegetables that locals eat at home, the shape and texture remained splendid.
Using minced meat from the local brand pork "Miyuki Pork" to enhance the richness and use Shinshu miso as a secret ingredient, a local curry called "This is Shinshu!" was born.
