In creating the "Noto Jin" series of products, what we value most is to maximize the power of the materials nurtured by the nature of Noto. The rich natural environment of the Noto Peninsula is truly a treasure trove of nature, with the sea breeze from the sea, the clear water from the mountains, and the plants of the four seasons.
At "Noto Jinki", we carefully select botanicals nurtured by Noto's climate and carefully extract the individuality of each ingredient. During the distillation process, great attention is paid to temperature control and time allocation to ensure that the original aroma and taste of the ingredients are not compromised.
In addition, the "Tonic Salt" series uses coarse salt from Suzu and Noto Island, and is particular about the natural sweetness that does not use any fructose glucose liquid sugar. This is a manifestation of our belief in pursuing deliciousness only with the blessings of nature, without relying on additives.
We were also severely damaged by the Noto Peninsula earthquake in 2024, but by overcoming these difficulties and continuing to manufacture products, we are expressing hope for Noto's reconstruction and future.
