More about the Brand Owner

種石健一

KENICHI TANEISHI

As an enthusiastic whisky lover, he questioned the soaring price of long-aged whisky and sought an easier way to enjoy the deep flavor. Focusing on high-quality wood discarded in Shizuoka Prefecture, he launched "#酒ハック" by applying charring technology inspired by the scent of bonfires. After numerous prototypes and tastings, we have developed a sake aging kit that produces a maturation flavor in just half a day. It has been well received through crowdfunding, and continues to propose a new style of enjoying alcohol more freely at home, aiming to realize a world where everyone can age sake as a matter of course.

"Make your usual drinks even more special."

#Sake Hack, which started with this idea, is a project that makes the dreams of alcohol lovers come true.
Witnessing the soaring prices of high-end whisky that have been aged for a long time, we faced the challenge of "whether we can enjoy the taste of aging more easily."

In the early stages of development, we took on the challenge of making sake aging bottles made from hollowed out wood, but we felt that we were stuck with the high cost of the material and the difficulty of processing.

One day, while camping deep in the mountains, an inspiration was born at the moment when the aroma of wood rising from the bonfire and the taste of whiskey were in perfect harmony.

"Wood may go better with alcohol if it is burned."

This reminded me of the process of charring, in which the inside of a whiskey barrel is burned to add aroma and flavor. In addition, a shift in the idea of "soaking wood in sake" was born instead of "making a bottle out of wood".
Shizuoka Prefecture is a region where forestry and furniture manufacturing are thriving, and high-quality precious wood is gathered. However, due to slight color differences and size adjustments, a lot of high-grade scraps were discarded.

"If we can make use of this surplus material to create a product that will please sake lovers."
With this in mind, with the cooperation of woodworking shops and lumber dealers, we collected more than 20 species of fragrant wood. Hundreds of tasting tests were repeated, varying the degree of baking, soaking time, and the combination of tree species and liquor.

Our challenge attracted more than 3,800 support through crowdfunding and received more than 40 million yen in support. It received overwhelming support, mainly among men who like to drink, and was a big hit in the same category, ranking first in the amount of support in history.

The Liquor Hack Project always wants to be social good.
As part of this effort, we outsourced the bagging of products to "With Kuzuka" in Hamamatsu City. We want to support opportunities for people with visual impairments to work while interacting with society, and we want to contribute with fair remuneration rather than donations.

What are we doing?

"Just wait half a day, and your usual cup will be upgraded."

This is the crux of the #booze hack.

We have thoroughly studied the barrel aging process of whiskey and extracted its essence. In barrel aging, alcohol dissolves components such as vanillin, lignin, and tannins contained in the barrel, dyeing it a beautiful amber color.
In addition, esters, which are aroma components, are also transferred to sake, creating a mellow and mellow taste.

#酒ハックでは, we applied this principle and used seven carefully selected types of domestic precious wood. By baking the surface with a laser, the quenching (charring) of the barrel is reproduced.

In the selection of precious woods, we focused not only on the good aroma, but also on its compatibility with alcohol. Some of them had a good scent on their own, but when they were added to alcohol, they turned into a "hellish taste."

With the advice of sommeliers, bartenders, and friends who like to drink, we finally narrowed it down to seven types of precious wood.
There were similar products on the market, but there were still many problems, such as the need for long-term soaking and the fact that it was easy to leak from the container.

Therefore, in #Sake Hack, the "baking" process has been strengthened so that the aging effect can be felt in a short time, and a special glass bottle is used so that the contents do not leak. The transparent bottle looks beautiful, and we aimed to create a finish that will be appreciated as a gift because you can enjoy the changes in aging with your eyes.

The prototypes produced in the early days were uneven in shape because the size and doneness of the precious wood were manually adjusted one by one. However, after many failures and improvements, it led to the current #LiquorHack Core Set.

It is not just a "set of wood and bottles", but a product that provides an experience that "makes sake more delicious and allows you to enjoy it more freely".

Commitment to the product

[Sake Aging Kit # Sake Hack Basic Set]
The feature of the complete package, which includes a special glass bottle and 7 types of precious wood, is the ease of "just waiting for half a day".
If you pour sake into a special bottle set with baked precious wood, you can enjoy the longed-for aged flavor in just half a day.
The precious wood is carefully selected wood from Hokkaido and Shizuoka prefectures, and the surface is baked with a laser to reproduce the quenching of barrels (charing).
The seven types of precious trees (birch, cherry, cedar, cypress, mizunara, chestnut, and maple) that are included in the package give the sake a different aroma and taste. For example, Mizunara adds depth and complexity to whiskey, while cypress adds a refreshing aroma.

[Barrel smoker]
Developed with the concept of "passing on the aroma beyond time", the barrel smoker that wears the memory of aging adds a story to your drink.
The set includes a main body made of whiskey barrel wood from a domestic distillery and smoked chips blended with Scottish peat on whiskey-soaked scraps.
When you pour liquor into a glass, put a smoker on it, and light the chips, the smoke slowly flows in like a waterfall, and the experience of "pouring aroma" begins.

【Tenryu Tunnel Barrel-Aged Coffee】
This is a new product developed using barrels that have been used for aging whiskey for many years at famous distilleries in Japan, and teaming up with "Kamome no Coffee Shop" in Hamamatsu City, Shizuoka Prefecture.
Carefully selected specialty coffees are aged in a tunnel that is ideal for aging in a constant temperature environment throughout the year, which is also used as a wine cellar. Non-alcoholic coffee with a slight whiskey scent can be enjoyed by those who cannot drink alcohol or those who want to drink but cannot drink.
