After experiencing life and food culture abroad, he founded the donut shop "Nicot &Mom" in Kyoto in 2010.
After my son's egg allergy, I started making allergy-friendly sweets and faced various customer feedbacks.
"I can't eat it, so I'll prepare something else."
I want to reduce such commonality as much as possible.
People with and without restrictions gather around the same table,
We want to deliver sweets that allow you to enjoy the same deliciousness.
With this in mind, we launched "Everyone Kyoto Higashiyama Factory" in 2024.
From a dedicated workshop that does not bring in wheat from Kyoto Higashiyama, we deliver "sweets that everyone naturally wants to choose" every day, rather than "restricted food".
