The winery strictly enforces a "minimal intervention" approach, minimizing manual manipulation during fermentation and aging.
For example, fermentation is left to natural yeast, and clarification and filtration are kept to a minimum, so that the unique character of the grapes and the region is directly expressed in the wine. It also incorporates traditional yet careful techniques, such as gravity-based movement and gentle pressing with a basket press.
One of the challenges in product development was the need to flexibly adapt to the different climates and grape yields each year. Because we let things take their natural course, there are many unpredictable changes and challenges, and sometimes bold decisions and patience are required. However, the wines born through this process possess a unique character and depth.
Furthermore, from the perspectives of sustainability and SDGs, we are advancing initiatives with a conscious social responsibility such as a production system with low environmental impact and the adoption of recyclable packaging.
