Cafe Shinmugi is probably a café specializing in ancient wheat, which is rare in Japan, or even in the world.
The spelt wheat we use (German name: Dinkel wheat), commonly known as "ancient wheat", is a traditional ancient grain that has been cultivated in Europe since more than 9,000 years ago (the Jomon period in Japan).
This ancient wheat not only has a rich flavor, but also can be eaten by people with wheat allergies, and is characterized by its high nutritional value such as mineral content in whole wheat flour. At our store, we purchase Hokkaido brown barley and use homemade flour.
All menu items (including seasonings) do not use wheat other than eggs, dairy products, or spelt, so anyone with or without allergies can expand the menu to choose from. (Except for Margherita)
We also offer hotcakes made with "Ain Koon Wheat (organically grown in the United States)", which is said to be the world's oldest cultivated wheat.
The interior of the restaurant has a calm Japanese-style atmosphere, with raised seats and table seats. We try to create a space where everyone from babies to the elderly can spend a relaxing time. Although it is a small café located in a residential area, it is open every day with the desire to bring "the charm of ancient wheat" and "food" to many people.
