At Spring Tree, we produce raw sweets with a focus on raw chocolate. We are particular about the low-temperature manufacturing method below 48°C to finish the cocoa's original aroma, flavor, and nutrition of the ingredients as much as possible.
This method of manufacturing without using fire is a way of thinking to make the most of the power of the ingredients and aim for chocolate that can be easily incorporated into everyday life.
The ingredients are not white sugar, dairy products, eggs, or flour, and only plant-based ingredients are used. We mainly choose ingredients with clear origins and quality, such as organic locao cacao from Ecuador, organic coconut sugar from the Philippines, and organic raw cashews from India.
By adding edible flowers grown in Tsukigata Town, Hokkaido, it adds the unique personality of spring trees as well as its aesthetic beauty.
All production is made in small quantities.
While determining the temperature, humidity, and material condition, each process is finished by hand. Because it is a delicate raw chocolate, we value the time we spend with the ingredients and aim for a quality that you can pick up with peace of mind.
