I opened a confectionery shop in Heisei 4.
It started with the name "Soka Kobo Caprice".
Since then, I have always faced sweets for 34 years.
The joy of training in Japan and abroad and being able to have your own store.
After that, "I want customers to be more happy", not just cake shops, "sweets &restaurants",
Furthermore, we continued to challenge ourselves by changing the shape to "sweets café".
From that experience, I realize that sweets can expand infinitely depending on how they are delivered.
The "Sweets Research Institute" launched last year is a place for new challenges.
This is not just a confectionery shop, but a place to experiment and propose the future of sweets.
Because sweets are not only a "sweet feast", but also touch people's hearts,
It's because it's a "reward" that makes you smile.
Even a small baked goods can deliver a moment that makes you think, "I did my best today."
I believe that the accumulation of this will make you happy every day.
I started the brand because I felt that the "way of sweets" had changed with the times.
Rather than being swept away by mass production or flashy trends, we want to carefully pursue a "memorable bite".
With that in mind, we are repeating prototypes every day to find the taste we want to deliver the most today.
There are three things we want to achieve at the "Sweets Research Institute".
The first is the provision of reward sweets that are loved by the community.
The second is to create a place for co-creation where young pastry chefs and confectionery lovers can take on challenges.
The third is to send out flavors that can only be born here from Gifu to the whole country.
While passing on the experience accumulated over 34 years to the next generation and customers, we want to grow the "Sweets Research Institute" into a base where sweetness and smiles spread.
Research is just beginning.
We will continue to respond to the question "Why the research institute?" and envision the future of new sweets with everyone.
