What are we doing?
In North Canterbury, New Zealand, grapes are grown using organic farming methods that do not use any pesticides or chemical fertilizers.
On a 2.5-hectare vineyard made of limestone and a small amount of clay, located on a northwest-facing slope, 35-year-old trees are cultivated.
To maximize the terroir unique to the land, we carefully nurture the vitality of the grapes by spreading compost (compost) in the vineyards, living in harmony with nature.
Commitment to the product
We thoroughly implement "low intervention" (minimal intervention) throughout every stage of brewing.
We use traditional and natural approaches such as foot-crushing and whole-chamber fermentation (maceration carbonic), and brew without any additives. Additionally, the 2022 vintage uses stainless steel tanks, and in 2024, older neutral oak barrels are used, adopting a flexible approach tailored to the unique character of each year's grapes, continuing to pursue a dynamic, pure flavor.
