At Bruny Island Beer Co., we are committed to using locally sourced ingredients in pursuit of "Tasmanian uniqueness". Our brewing prioritizes bringing out the best in the personality of our ingredients, which change with the seasons, without being bound by styles or preconceived notions. For example, we use Tasmanian wheat and hops whenever possible, and actively incorporate ingredients that can only be found here, such as honey and water from Bruny Island, as well as quinoa, spelt wheat and native plants.
Our close cooperation with local farmers is also a major feature of us. They interact directly with farmers for specific ingredients and are deeply involved in harvest timing and quality control. In addition, we actively collaborate with other industries in the region, such as aging in whisky barrels, to reflect Tasmania's diverse culture and techniques in our beers.
The manufacturing process also has its own commitment. The brewhouse reuses former milk vats, and all beers are brewed in open fermentation and finished in bottle condition to achieve natural fermentation nuances and complex flavors. The attitude of not using any preservatives and valuing the original flavor of the ingredients is also connected to sustainability and health consciousness.
From the perspective of the SDGs, we are conscious of sustainable manufacturing, such as contributing to the local economy, reducing waste, and promoting reuse. For example, Whey Stout, which uses whey from cheese production in beer, is a symbol of a circular production model.
