What are we doing?

LARK's distillery is thoroughly committed to whisky making, blending Tasmanian wilderness with traditional craftsmanship. Their philosophy is "grain to glass", that is, all processes are carried out in-house, from raw material selection to bottling. Using Tasmanian barley, our own peat wetlands in the island's central highlands, and crystal-clear water sources to bring out the best in the land's character.
 
In product creation, while using traditional double distillation, we actively take on innovative barrel aging and limited releases. For example, the Mizunara Oak Rare Cask, which is made from rare Mizunara oak barrels that have been around for 200 years, and the Amaro II, which is finished in barrels seasoned in local Amaro, are pursued in a unique flavor experience. These limited editions are produced in extremely small quantities, in the hundreds of pieces, combining rarity and artistry.
