Based on Duka, which originated in the Middle East, which is a blend of spices and nuts, this special all-purpose seasoning is a blend of fragrant sesame seeds, fragrant sansho, chen skin, secret ingredient, and rich cacao. The crunchy bite is so deep in flavor that you can easily enjoy the ethnic taste just by pouring it on your usual dishes or mixing it. It is recommended for various dishes such as curry, salad, and meat dishes.
〇 Easily change the taste of your usual dishes. A simple seasoning that you just need to pour and mix.
Blended with 9 kinds of spices and nuts, Duka makes ordinary dishes ethnic just by pouring them on and mixing them. It is very easy to use, not only as a topping for curry and salads, but also as a "mixing" with the batter of fried chicken when grilling meat. It eliminates the rut of cooking and brings out the flavor and umami. It uses ingredients that make you feel "Japanese" such as budo sansho, sesame seeds, and chen skin, and also blends cacao husk (cacao bean skin) as a secret ingredient. It has an addictive taste that is familiar to the Japan palate.
〇 I'm happy that it's nutritious and healthy. A unique spice blend rich in aroma.
Duka is a simple seasoning that blends nuts, spices, and salt. It is very healthy because it takes in the seeds, fruits, and husks of plants that are full of energy. Nuts are rich in omega-3 fatty acids, vitamin E, and dietary fiber, which are essential for maintaining health, and are full of nutrients with appetizing and flavorful spices. The refreshing scent of budo sansho and chen skin, which are called the highest peaks of domestic sansho, passes pleasantly to the nose and enhances the deliciousness.
〇 The secret ingredient cacao husk gives it a rich and deep taste.
One of the spices we blend is cacao husk (cocoa bean peel). Cacao husk is a well-balanced ingredient that satisfies four of the five tastes (sourness, sweetness, bitterness, saltiness, and umami) that humans can feel on the tongue other than saltiness. By blending it with other unique spices and salt, the deliciousness is balanced and the taste is rich and deep. As a true secret ingredient, it further tightens the taste of Duka.
〇Industry-academia collaboration with Ryukoku University Fujioka Seminar. A jointly developed product filled with students' ideas.
This product was jointly developed with Ryukoku University's Fujioka Seminar, which works with companies and production areas from a marketing perspective under the theme of "utilization of unused resources". We asked for their cooperation in conducting questionnaires on development, proposing package designs, and developing recipes using duka, and incorporated the unique perspectives of the students. With the aim of connecting "production areas" and "consumption areas," Fujioka Seminar is also implementing initiatives aimed at the survival of budo sansho production areas and efforts to deliver the voice of the market to the production areas. We also contribute to regional revitalization through activities to interact with sansho farmers, who are in danger of survival in the production area due to leaving farming and aging, and to convey the charm of budo sansho. As part of these initiatives, we also use budo sansho for GOOD CACAO's original duka.
〇 Manufacture of products that are friendly to both people and the environment.
The cacao series, which uses cacao husks (cacao bean skins), is not only delicious, but also upcycling is one of its important objectives. When making bean-to-bar chocolate, cocoa husks, which make up about 30% of cocoa beans, are rarely utilized. Therefore, we are developing upcycled products that find value in cacao husks. By using these products, we contribute to reducing (reducing the amount of wasted waste as much as possible). We believe that purchasing whole cacao will lead to high-quality production.
〇 "GOOD CACAO" series.
The "GOOD CACAO" series brings out the full charm of cacao, such as the soothing aroma of high-quality cacao purchased directly from producers who can see the face, and the unique richness and umami that create depth of taste. Not to mention cacao nibs, but also to the flavorful husk (cacao bean skin) created in the process of making bean-to-bar chocolate. Based on the concept of "all cacao is delicious," we will deliver a "cacao-scented moment" that will relieve your mind and body, which will also lead to cacao upcycling.
