With the cooperation of Hayashi Forestry Co., Ltd. and Mr. Hayashi, this project began quietly with careful instruction about the trees that grow naturally in the surrounding mountains. From among many types of wood, we chose cypress, which is the most familiar to us yet emits a dignified fragrance. The cypress, cut by hand without relying on machines or chainsaws, was carefully delivered without losing its delicate aroma. After fermentation, saison yeast beer is soaked in cypress like dry hops, and the aroma quietly spreads, allowing yourself to relax. A premium craft beer was born by being raised at the perfect moment, when a soft, subtle hint of hinder aroma blended in, resulting in a complex yet crystal-clear aroma. Rising in the glass is the spiciness derived from saison yeast and a refreshing aroma reminiscent of lemongrass. Beyond that, the presence of cypress trees gently nestled like the breath of the forest. When you take a sip, a deep aftertaste slowly spreads, as if standing in a quiet forest.
