Aiming for "Soï Soï for the Healthy People and the Earth"
Only 1% of the okara that is produced in large quantities when making tofu is consumed as edible. Other than that, 65% is livestock feed, 25% is fertilizer, etc., and 10% is other, and 5-9% is currently disposed of as industrial waste (according to materials released by the Japan Tofu Association).
Okara is used as feed for cows and pigs, but it takes 10 kg of soybeans to produce 1 kg of meat. At first glance, okara seems to be used effectively, but meat emits many times more carbon dioxide to produce than soybeans.
The beaches of Kamakura, where we work, are gradually losing their beautiful nature, with the beaches narrowing year by year due to climate change, and hiking trails being blocked by fallen trees due to large typhoons.
Is there anything we can do? I thought about whether there was anything good for the earth by incorporating it into my daily diet, and I didn't want to waste a large amount of okara left over after making tofu and soy milk! "Soï Soï" was born from this thought.
