Rubin is a variety created in Bulgaria by crossing Syrah and Nebbiolo. The strengths of both varieties, such as firm fruit flavor and elegant acidity, can be felt, and they are beginning to become popular for their soft mouthfeel.
With its small grains and relatively thin skin, Rubin is a grape variety suitable for making high-quality wines. Rossidi Rubin grapes are grown in a plot of marble, pebbles and gravel in the Thracian Valley, at an altitude of 400 meters, where there is a large temperature difference between day and night.
Fermentation is carried out by indigenous natural yeasts. It is aged for 16 months in 300L and 500L French oak with a new barrel ratio of 10%.
