Organic cider 2023 (unripe fruit preparation)
"Immature doubles"
90% of the unripe fruits harvested from the end of July to the beginning of August are a mixture of varieties such as Fuji and Tsuru, Benitama, etc. Primary fermentation is done by adding the juice of Kunimitsu (Ralls Janet), which is made by soaking wild gummy berries that have been frozen with seeds and pulp to the juice of unripe fruits. After that, the juice of the same unripe fruit was added and finished with secondary fermentation in the bottle.
In order to pursue the potential of the unripe fruit of apples, we aimed to create a cider that combines two fruits, "unripe fruit" + "unused fruit in the region", and named it "immature doubles" for tennis doubles.
The astringency and bitterness unique to unripe fruits containing a lot of polyphenols are further supplemented with tannins by soaking gummy berries this time. It has a refreshing and dry taste derived from raw food species such as Fuji and Yatsuru, and a pleasant bitterness spreads.
It is a cider that you want to cool down and drink on sweaty days or hot days.

Since it is bottled without filtering, the fruit-derived nigori and lees remain, which gives it a special flavor. When viewed through the bottle, the lees may appear black, but this is a characteristic of this fruit wine, so please enjoy it with confidence.
